The Best Banana Muffins
Who doesn't have bananas sitting around getting brown and mushy? Well, I know that I do and if you're like me, you hate to waste food. Now, yes, I have a pig, "Peggy" who would devour these mushy guys in a heartbeat, but she already weighs enough!
The recipe below is EASY, healthy, quick and super yummy (it's a no brainer) and is adapted from the amazing cookbook "The Family Cooks" by Laurie David.
Ingredients:
3-4 bananas, soft & mushy is best.
1 egg beaten
1/4 cup melted coconut oil (or any neutral flavored oil)
3/4 cup honey
1 1/2 cups whole wheat flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
Putting it all together:
Preheat oven to 350 degrees. Line 12 cups of a muffin tin with liners or oil well.
In a large bowl, mash the bananas then add the egg, oil & honey. Stir to combine. Fold in the remaining ingredients with a rubber spatula and fill the muffin cups 3/4 of the way.
Bake for about 20 minutes or until a toothpick comes out clean.
